As reservation managers, we’ve seen hundreds of events go perfectly — and a few go off track. The difference? Preparation.

Here are 5 smart things you can do to reduce surprises and make your party as smooth and fun as possible.


⏰ 1. Avoid Peak Time (Saturday 7pm is a War Zone)

Let’s be honest: Saturday 7:00 PM is the most overbooked time in the hibachi catering world.

All the big events — birthdays, anniversaries, summer parties — pile into that window. So even the best hibachi companies, whether you're booking hibachi at home or a hibachi grill & buffet, are fully packed.

What to do:
If you’re booking during peak season (May–October), try to pick a time slightly earlier (like 4–5pm) or later (8–9pm).

  • Confirm your guest count and upgrades at least 3 days before

  • Sushi orders or specialty items? Tell us even earlier

  • If something changes, contact both customer service and your chef right away

Why? Because we focus on doing what we do best: cooking great food and putting on a show. Setup services require trucks, staff, and time — and the value just isn’t there for a food-focused team.
